Over the years she has had periods when she didn't want to eat and we rushed her to our vet ... we were always told [after determining that there were no physical problems] when they are hungry, the will eat! I would leave kibble or whatever she is used to available and just see if she will finally eat? Good luck and I hope there is nothing wrong that would cause her to refuse food!
I agree, she is probably just adjusting to her new home. She will eat when she is hungry. Choose one food and stick to it. If she was free-fed before, leave the food down all day. If she had scheduled feedings, put the food down at that time and take it up after 20-30 minutes. Don't keep offering her alternatives.

Try trick training or games. If she knows any commands like sit, stay, down, play with her and reward her with a kibble. If she doesn't know those commands, start working with her.

Congrats on your new family member!
