My husband makes the best chops I've ever had. He likes bone in w a little fat rim on the side. He salts/peppers and then sears stovetop on both sides in a cast iron skillet. He then cooks in 350 oven w a little dark beer in the skillet w foil on top.

I'm going to have to try the brining recipe. I have never brined!
