Ok, you and SM have gotten me convinced on the chiladas. I'll try it, but I don't want to try the Bud version. I love tripe (mexican style) but I still haven't had it in tacos There's a chinese dish which is pig small intestine in black bean sauce, it's really good, except not many places cut the pieces thin, they leave it in little hoses. There is the Taiwanese style, they call it "chitterling" they do slice it really thin, and serve it either braised or battered and deep fried with oyster sauce with ginger and cilantro, so yummy! Or in a thick soup broth with thin vermicelli type noodle, one of my faves growing up.

I've heard of kopu luwak, I just watched the Bucket List again. You're lucky to have been able to try it. I wanna try it and i don't really even like coffee.

Scrapple sounds like a poor man's pate, maybe even liverwurst? I'd try it. Doesn't sound gross to me. I like headcheese remember?

Ok, who likes beef tendon? and I'm not talking bully sticks! My favorite mexican place has birria with big pieces of tendon in it. I've tried it at other places, and they don't really have any tendon in it.
