PMom,

I'm not as concerned about the choking, as I am my two just
swallowing a shorter piece whole. They will digest, but, it would
take a while, and probably upset them.

I usually pull/take them up, when they reach about 2" in length,
and just give mine fresh (long) ones.

Actually, I don't think the Bully Stick smells all that bad, but,
their breath does after they've chewed it a wile. You can buy
ones that don't create that odor.... OR

Increase the Dental Hygiene of your animal(s)
