Buffalo is actually considered a healthy red meat. I have it before, not bad actually. They are definitely big & stinky. Its a lot more expensive than beef.

We use ground buffalo meat all the time, use it in place of ground beef.
When there was a place that sold buffalo meat for roasts etc we would buy the roasts too. But the place changed hands and no longer has buffalo meat. It doesn't shrink as much as beef roasts and buffalo meat is lower in cholesterol.
