Default When to stat a new puppy on a different food?

Hi everyone! Whit comes home next Friday, and we are pretty much ready for her aside from the food issue, and I have a few questions about that.

Our breeder uses Iams smart puppy small breed formula, and I know this isn't really that swell of a food so I plan to switch her to either TOTW (not sure which variety would be best...?) or Blue Buffalo puppy, as I can get both locally and have read good things about both. My question is, when is a good time to start introducing her to the new food? I know I'm not supposed to do it right away as she is adjusting to being in her new home, so I will have to buy a bag of the Iams. Would she be ready to switch by the time that bag of Iams is running low, orobefore? Our vet is a SD pusher, so I don't really trust his opinion on the food issue.
