That would be fine. Could remove the yolk so fat is less of a concern. Probably better to scrable them with water instead of milk.
Boneless skinless chicken breast with fat removed (cut up in her food) would be fine. Could mix it with white rice or sweet potato and skip the regular diet for a few days.
