I think Emily is just being smart about it. They do need to know each other in the real world, because the show was not the real world. She has her daughter to think about too, and isn't ready to rush into a marriage, and I think that's great. Their whole relationship developed slowly and I really think it's good that she wants to wait and know for sure, and work on their relationship, before getting married.
I was surprised he picked Emily too because I had heard it was Chantal! I spent the whole show feeling sorry for Emily and thinking she was going to get her heart broken!
