My 2nd question: She gets lonely/mad my wife and I are gone at work, she flips her pee pad and pees where it would normally be. We have thought about getting a 2nd little one for her so she can can company and someone to play with but cant afford most dogs...so I walk into the groomers today and I see the cutest little Blonde/Brown yorkie about 3.5lbs in the gromming room and I ask about her situation, come to find out
her owners moved back to China and gaver her to the groomer about a week ago. Shes 2 year old and healthy and $150.00 because they just want to find her a good home. Do you think this is some sort of sign? lol

Yes, take it as a sign and go for it. Though I would have the two spend some time together and make sure they'll get along and I wouldn't leave them home alone untended for a while. Separate one in the bathroom/whatever/while you're gone for a few days. Watch their interaction closely every evening.
Royal Canin is good. I've heard not so good things about Beneful but if it helps them eat it...then that makes it good. I would just use more of the RC (dry) than wet.
