There's tons of variations of it. Sometimes they use cherry tomatoes and mini mozzarella balls and skewer them with basil for caprese lollipops. The more authentic kind is made with buffalo mozzarella. You can find fresh mozzarella in balls (in bags or containers with water in them) at fancier markets, kind of expensive, but very yummy.
