Love Growing back long coat

I had Bentley cut into a puppy cut because I felt like he had a lot of split ends due to my lack of knowledge in the beginning. I think he is adorable in a puppy cut but I love the long coat look. Id like to start growing it back out but I'm not sure how to go about doing this. What should I trim and how often should I trim? Id like to start doing it myself. I know his ears need to be trimmed but when growing a long coat what else should be trimmed? And will the layers from the puppy cut look strange as it grows out? I'm still learning all this. I really would like to groom him myself but of course I'm a little hesitant bc I don't want to mess up. How should I keep him still while I groom him? Any suggestions would be greatly appreciated. Thanks

Also I forgot to ask, when doing the topknot, what's the best way to do it to make it look even and to keep from pulling his hair? How do you do two top knots? Like pig tails. Sorry for all the questions. Thanks again.
