I forgot to answer your question about how long it stays fresh. After I freeze the cubes, I put them in a ziplock freezer bag. They last a long time, but if it somehow looks freezer burnt, or if the bag isn't sealed all the way, I'll toss them. I always make sure I have at least 1 can in the cupboard just in case.
