I consider myself a very good cook but I don't cook on a daily basis. I've always said that I'm more of an "event" cook. I just hate coming up with a daily menu. I usually cook on the weekends and we have my husbands kids over to eat. I also do freeze veggies in season and make homemade soup and such and freeze it. My husband owns restaurants so eating out is just too easy. I will say that I don't think I've ever eaten in his restaurant without modifying my order in order to make it healthier. It's hard enough because he owns Mexican restaurants. Oh - and I'm the queen of leftovers. I never throw food away. I love to come up with combinations to make it a different meal. Breakfast with Mexican leftovers is our favorite!
