If you want the ears to continue to stand, continue shaving for the lifetime of the dog. If you choose not to shave/trim, the hair will eventually weigh down the ear flap.
If you want to grow the coat longer, make sure your groomer knows not to cut or don't take your pup to the groomer. You can learn to do all of the maintenance grooming at home: ear trimming, foot trimming, sanitary cut.
