I have lived in TX all my life. I live in a "smaller town" between Austin and Houston. I don't like Houston very much but have friends and a little bit of family in Austin so I go there pretty frequently. My sister lives in the Dallas area and likes it. I'm not much of a city person. The town I work in (an hour commute from home) is a college town and a little bigger than where I live and I like that size but big cities I can do without. There are so many "bedroom communities" around Dallas though that you don't even have to deal with the city stuff much if you live in an area that has all that you need (Mansfield for one is growing leaps and bounds but still is not too "big").
I've never lived in or been to California so I can't compare for you. Good luck with your decision though!
