I use the regular Flagship, but you could use the Reserve Flagship is you want. I think the only difference is the Reserve is aged for a longer period of time. If you cannot find Flagship just google Flagship Cheese substitute. It is a white, semi hard, sharp cheddar with a nutty flavor that slightly crumbles.
