We're not interested in pre-made raw (if I'm not going to be feeding him bones for dental health than I might as well be feeding high quality kibble, IMO).

I'm aware that raw transition can lead to loose stools, and that bloody stool and bloody vomit are not healthy or normal reactions. I thought that I made that clear in my initial post, sorry if I didn't. This is why Valor is not currently on raw. As I said, I am not new to raw or to dog owndership. What I'm getting here is that no one else has had this experience. I must therefore conclude that, for some reason, Valor is not compatible with raw, so he'll stay on kibble.
