Default Chocolate Mint Creams

These cookies have always been a hit and oh so yummy!

1 1/4 C flour
1/2 tsp baking soda
2/3 C packed brown sugar
6 Tbsp butter
1 Tbsp water
1 C semisweet choc. chips
1 egg
1/2 to 3/4 pound pastel cream mint kisses (these are the ones w/ those white tiny bumps on them)

stir together flour & soda. Med saucepan heat and stir sugar, butter, and water over low heat till melted. Add choc. chips. Heat and stir till choc is melted. Pur into large mixing bowl and let stand for 10 minutes.

Beat egg into choc. mixture. Stir in the flour mixture till well mixed. Cover and chill for 2 hrs.

Shap into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. bake @ 350 degree oven for 8 minutes. Remove and immediately top each cookie w/ a mint. Return to the oven and bake about 2 minutes more or till cookies are done. Swirl the melted mints w/ a knife to "frost".

Remove and cool till mints are firm. Makes about 48
