Even a small amount of fat left on it could have caused a problem. If it irritated her intestines, it could irritate her pancreas. Wouldn't be surprised if that already happened...
Sounds like she had several episodes of diarrhea. I hope she was given fluids. A few licks of anything along the ham/bacon line can cause major problems... My girl flares up from things like lean chicken and possibly even potato. They all handle things differently...
