Teegy, hmm, I've never noticed any problems with their ears. Mine don't like hoods much either. Our winter walks are generally 20 minutes, a little longer when it's warmer, a little shorter when it's colder. I try to set -5 F as my cut-off point. When it's that cold, walks are very brief.
If any shivering takes place, I either pick up the pace, put them in my coat for a brief warmup or end the walk. I'm sure you'll find a good balance.
