Everything sounds right. I would leave a little length to the pup's back; short but not shaved, JMO. Also, it is appropriate to tip if the groomer does a good job. I usually tip between $5 and $7.

I'm assuming that she is talking about plucking the inside of the ears and shortening the hair on the outside of the ears to keep the weight off of them. Everything sounds good, and it sounds like you have a good groomer that has good communication. No worries; I'm sure everything will be fine. (:
