Default Leaving a yorkie home alone

I have to leave my 4 month old yorkie home alone for 8 hours only 2 days out of the week. Every other day of the week she is supervised 24/7. For the 8 hours that no one is available to watch her she gets the bathroom all to herself. Its well lit and she has everything she could need: comfy crate, toys, food, water, pee pad, etc. She's not properly pee pad trained, sometimes she goes, sometimes she doesn't.

The problem I'm having is that on the days that she is left home alone, when she poops, I think she eats it. When I come home from work, her poop is scattered into little pieces.

Anything I can do to prevent this? This can't be good for her.
