However the carrot has extremely touch cellular walls which does not allow for digestion of these too easily. By cooking them, (or juicing) especially steaming or boiling you break the cellular walls allowing the the easy break down of these two. The only drawback is that by cooking them you destroy the vitamin C. I give them as treats as well, like you said small bits. |
