I do not boil meats for various reasons but the main one is that it makes the flesh tough and leaches out the flavor into the water. Roasting produces a much nicer consistency of chicken - I usually make chicken salad that way.
If you are going to boil your chicken, make sure you boil it off bone for 10-15 minutes and check the internal temperature of the meat with a thermometer. On the bone needs an hour for boiling.
