You should be able to easily feel your dog's ribs under one layer of fat. you should also be able to see his waist (chest is wider than waist). If he has more than that, he should lose weight, and if he has less than that, increase his calories either by a small (about 10%) increase in food. If he doesn't gain weight with small increases in food, time to see a vet to make sure things are OK medically.
