I don't think age is a factor. You might try different ways of teaching roll over. What works for one pup might not work for another. Luckily, there is more than one way to teach any trick.
As for give paw, I taught Kaji to do a proper shake. The command is actually, "Nice to meet you," in Spanish. He knows to only give the right paw unless I ask for "the other one."
