Oooh yea I kno exactly what you mean! Well I re-use oil.....so when that happens I use fresh oil & it seems to do the trick. The chicken comes out crispy, crunchy & lighter. When you use the same oil too many times the oil "breaks down" or not as crisp & it'll soak in the chicken.
If that doesn't work.....ill have to ask my mom for more suggestions. She's like the Goddess of Fried chicken. Lol. I've never deep fried though always done it on a skillet. :-\
