A lot of dogs with liver shunt or Microvascular dysplasia (MVD - microscopic shunting) eat the Hill's L/D diet. The U/D diet is a bladder stone diet (many dogs with shunts also have bladder stones) but also has restricted protein. Dogs with liver problems generally do worse on things like red meat. My dog (who has MVD) cannot eat meat at all or she becomes very ill. We feed a home cooked vegetarian diet.
Many dogs with MVD or Liver shunt also use Silymarin (milk thistle) to help protect the liver. You should ask your vet about the use of milk thistle as it has been shown to help regenerate the liver.
I would pursue a surgical consult if this were my dog to see if this were an option.
