All i can think about now is her limp little body and how i think she almost died. She seems fine now. Rambunctious and happy, but i'm so stressed. I don't see anything online about this in dogs.

Descriptions can be deceiving and i sure hope this is nothing.
But have you thought of a Convulsion? Or seizure like activity ?
Just read about it and compare with what you saw ...
