Also love to cut up a whole chicken, marinade in lemon, sea salt, onion, garlic, ginger, chili past, paprika, tumeric, yogurt and coriander seeds. Its like a tandori chicken. Serve it with a cucumber salad - very refreshing. The only issue with cooking with tumeric is that it RUINS your clothes if you spill (which I do regularly in the kitchen). I need to wear old dark clothes whenever the tumeric is out LOL

On a more "traditional" ethnic front, I make my own pesto. Love that with shrimp, chicken, pasta...
You will love this soup!
Boil 3-4 stalks of lemon grass in a quart of chicken stock for about 30 min.
Let sit for about 5-10 minutes, remove stalks and slowly add (while stirring) about 1/2 can of coconut milk. That's the base! Now you can add whatever you like to it!
I have used shrimp, chicken and tons of different veggies.

(Make sure you rinse the lemon grass stalks first, and they will need to be cut in pieces to fit your pot.)
