My vet does everything in front of me. I have even held my pets when they get shots if an assistant isn't readily available.
Quit frankly, if my vet wouldn't allow me to be in the room, I would be looking for another vet. It's the same to me as taking a child to the doctor. I want to be in the room, know what's going on, and be able to discuss the problem.
