Default Response to accidents in the house

I've begun crate training my 3 year old Yorkie because my honey and I moved into a nice, new house. We want it to STAY nice and he wants my dog to have some order and for me to stop letting him completely run my life.

I've begun crating him when we're gone, and he sleeps in his crate right next to my bed at night.

But we've been having some discrepancies about how to handle accidents in the house. He is going by the old run your dogs nose in it training method....and I'm not sure I feel comfortable with that.

What is the best response for my dog's occasional potty accidents, so that he knows to go outside instead? Especially on accidents that we find WAY after the fact?
