First off trust your gut. If you are not comfortable then find a new one as you should feel comfortable

They usually draw blood from the jugular as easier to get the blood there instead of leg as the veins can collapse as they are too small in leg. Also you need those veins in leg in case of iv fluids. I remember when i learned about it as my demi was bruised from blood draw is how i found out about it as maltese have thinner skin than yorks. I freaked out and called er and they explained it was from blood draw.

Also there really is no reason to take your dog out of the room if you are comfortable with things in front of you . Some believe the dog does not act up as much if owner is not in room but I am not comfortable with my dog being removed anymore as I want to know what is going on now. So you can tell the vet I want to be in the room with my dog.

It is hard to find a good vet but definitely keep trying to find one like your old vet you trusted.
