This is not a recipe, but a really good timesaver for lots of weeknight meals. Brown ground beef, put in ziplock freezer bags in 1 pound portions and freeze. This can be used for a quick spaghetti sauce ("doctor" a jar of it), sloppy joes, tacos, american chop suey...you get the picture. It's a HUGE head start for me.
The same can be done for cooked chopped chicken breast...just cook some in a fry pan (diced) and freeze in 1-cup portions. You can also put the 1-cup portions in large muffin tin cups, freeze for 1-2 hours till firm without falling apart, then pop them out of the tin and put all in one freezer bag. They'll stay separated and you can grab however many "cups" you need when it comes time to use it (chicken soup, enchiladas, chicken salad, stir fry, etc.)
