I have the same situation. Max grew up with me not allowing him on the stairs, so he won't go near them if I leave the doors to the front hallway open. My younger boy has only been with us a little over 3 months and he has tested the stairs a couple times. He is responding very well to training.
When leaving the dogs alone in the house, I would recommend physically restricting access to areas you don't want them. Training is great, but doors and gates are better.
