No, there's no need to grind the food. That's why dogs have teeth.
Prey model is actually not that messy. You just train them to eat on a towel.
The proportions are 80% meat, 10% bone, 10% organ with 5% being liver. If you do a search for prey model you will find a ton of information or here's a few links if you want to do some reading on it ....
