You are right that you can make them finicky by doing that, but first you want to be certain that he does eat enough that he doesn't become ill. If he is very tiny, you will want to watch for hypoglycemia. Here people give them a product in a tube called Nutrical that is a high-calorie supplement to ward off hypoglycemia. Other things that can be given are sugar water and Karo syrup. Mine went right back to eating the kibble gradually after her weird teething diet. She now loves the high quality kibbles and never leaves a single one in her platter. Because mine was having such a hard time while teething, I could see she wouldn't eat the kibble because it hurt. Before she started teething she ate them just fine.
