I would get rescue remedy to calm her down if she is not good in the car... but get it now and try it one day beforehand to see how she reacts, I never like to try anything new with mine when I am traveling and wont have access to a vet. Bring a cooler with ice cubes, cold water, and a wash cloth... give her ice cubes in her car seat to lick/chew on, if she ever gets really hot, pour the water on the wash cloth and apply it to her stomach area to cool her down without sending her into shock. Each time you stop you can get new, fresh ice cubes. As soon as you stop for the night take her on as long a walk as possible then give her interactive toys, kongs, chews, etc to try and keep her busy while you are sleeping... if possible bring a portable expen so she does not need to be crated while you are sleeping.
If you know she will not eat the kibble, bring something that she will eat... you dont want to deal with a sick dog and trying to find a vet while you are traveling and that is what will happen if she doesnt eat for 3 days... also keep a tube of nutrical with you in case she refuses to eat anything.
Good Luck!
