If your choice is between a maltese and a yorkie, I would say you might want to go for the maltese.
I say this because you expressed concern about what color your pet would eventually turn out to be, and Yorkies are a breed where the color of their fur will change after you have already made a commitment to them. Yes, looking at the parents may be helpful, but it is no guarantee as to whether they will be light or dark.
My Daisy is a parti-carrier (she has white on her chin and chest) who had a very dark face, but at 9 months this is all turning a much lighter gray and tan. You just never know with a Yorkie!
