I too purchased smelly bullies. I believe it is a flavoring. But a YTer told me about another YT member that sells non-smelly bully sticks. Their user name is AMD. She currently is out of stock of any bullies.

Also, I only give the smelly ones on the day she is going to have a bath. LOL |
