My thoughts are that she was a bit overwhelmed by too many other dogs. She's become a little bit shy and submissive (rolling over onto her back) to other dogs. I like your idea of going during the week, too, and then on the weekends because it has been awhile since she has been there. It sounds like she was having fun, but was just a little shy and unsure of herself.
