-Tabouleh salad-(wheat salad) with tomatoes, cucumber, basil & feta. Yum! I'm having that this week!
-How about a wrap with cheese, tuna or chicken or hummus & veggies inside it?
-English muffin pizzas-spread them with spaghetti sauce, top w/cheese and your favorite pizza toppings and then you can nuke them or even better toast them in a toaster oven.
-Pita bread filled with chicken salad (with grapes, cranberries, walnuts, apple chunks, celery, etc. and a little mayo & cinnamon)
-Tomatoes, fresh sliced mozzerella, fresh basil leaves-just slice it all up and put it in a tupperware. Then bring a small jar or tupperware of olive oil & balsamic vinegar, or easier yet a vinagrette salad dressing. So yummy! |
