I always feel that I want a hot lunch when I am working. Something that makes you feel like you have eaten, something healthy that fills you up. What I usually do is slice up eggplant, zucchini, anise, sweet potato, mushrooms, onions,asparagus and just about anything that is vegie and lying around. Toss it in olive oil and fresh herbs like rosemary and time and minced garlic, and then place it on large cookie sheets and roast them off at about 425* for about a half hour. While that is cooking I make a combo of grains, like rice, barley, quinoa, wheat germ and cook that off. Then I make little containers, containing both the vegies and rice. That way you have about 3-4 lunches and or a dinner side dish. Plus you are getting a good dose of your vegies and grains for the day! |
