Maybe you could make up a pasta salad and add some nice grated mozzerella, olive oil, grated carrots, spinach, boiled egg, ripe olives, peas or lightly steamed broccoli. Be creative.  I think lunch should be the larger meal of the day, then go light for dinner. |
