I put a lot of things in my salad that will stick with me longer. Maybe you could bring a French roll to eat with your tossed salad. Put some dried cherries, cranberries or blueberries too.
Maybe you could make up a pasta salad and add some nice grated mozzerella, olive oil, grated carrots, spinach, boiled egg, ripe olives, peas or lightly steamed broccoli. Be creative.

I think lunch should be the larger meal of the day, then go light for dinner.
