My personal opinion on this would be to crate him so that he doesn't have the opportunity to poop while you're away, or at least he won't want to poop in the crate. No dog wants to soil their own "sleeping quarters", and will most likely hold it until you come home to let him out. It may take a couple of "accidents" before he realizes he doesn't like to go in the crate, but he'll get it. Just make sure the crate is just big enough for him to stand up in and turn around. If the crate is any larger, it'll give him room to potty, and you don't want that. Until he's crate trained, I wouldn't keep him in an area that you can't monitor him in, especially if he's making big messes, etc. hope this helps.
