Or when he's chewing on you (or something else you don't want him chewing on) you can simply say "No." then give him a bone or a toy he is allowed to have. Distractions work great too.
As for learning his name, just say his name over and over. When he looks at you, give him a small piece of a treat. Say his name again until he looks at you, then give him another small piece of treat. Eventually he'll associate his name with food and learn to pay attention when you say his name. Also, for awhile, when you talk to him, try to use his name as much as possible.
