It is really helpful to have someone show you on your own dog if possible. There are so many different ways to do a topknot. The hair isn't always long, such as in puppies. And as you know, the dog is usually moving around. But, I will try to describe the simplest way I know to do one.

Part the hair from the outside corner of the eye to about between the ears. The part should be at an angle so that when you have finished both sides there will be a point at the back between the ears. Band this with 3 loops around. The band should sit about one inch up from the skin on the top of the head. Now, holding the rubber band with two fingers of the left hand, use the right hand to find the hairs at the back point of the clump of hair. Still holding the band, pull these hairs straight back, away from the face until the band is tight (not too tight) against the skin. If done properly, this should make the little poof of hair over the eyes and be snug against the head at the back.

There are lots of videos showing how to do the topknot hair. It takes lots of practice to be good at it, so don't get discouraged.
