I really think it could be the chicken, if her itching is food related. Have you had allergy testing done to see if she has environmental allergies? The itching may not be food related at all.
I would normally suggest switching to a food that doesn't contain chicken for a few months and see how she does. But, with her stomach issues I wouldn't want you to feed her something that aggravates that.
