Butcher bones from the grocer are usually too large and hard for puppies to consume. They can be tooth breakers. If you want to exercise the jaws with chewing, I suggest bully sticks intead. bestbullysticks.com has good prices or Westbrooke here at YT sells them also.

If you do choose to feed raw bones, feed easier to chew bones such as bone-in chicken breast or feed through a cornish hen cut up.

The whitish "ashy" material you are seeing is stool from consuming the bone you are feeding. Too much bone can be constipating. I'd ditch the big marrow bones and do bullysticks or raw chicken bones wrapped in lots of meat.
